Ruth’s Chris Sweet Potato Casserole!!!


This Ruth's Chris sweet potato casserole is a copycat of the restaurant version. It's creamy sweet potatoes topped with brown sugar and pecan streusel.

Prep time: 15 minutes
Cook time: 45 minutes
Total time: 60 minutes

Ingredients:

Crust Mixture:
  • 3/4 cup brown sugar
  • 1/4 cup flour
  • 3/4 cup chopped nuts (pecans preferred)
  • 1/4 cup melted butter
Sweet Potato Mixture:
  • 3/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon vanilla
  • 2 cups mashed sweet potatoes
  • 1 egg, well beaten
  • ¼ cup of butter

Directions:

  1. Combine brown sugar, flour, chopped nuts, and melted butter in mixing bowl.
  2. Set aside. In a mixing bowl, combine sugar, salt, vanilla, mashed sweet potatoes, egg, and butter, and mix thoroughly. 
  3. Pour sweet potato mixture into buttered baking dish, and sprinkle the crust mixture on top. 
  4. Bake for 30 minutes at 350 degrees (F).
  5. Allow to set for at least 30 minutes before serving.
