- Add a little more oil and fry leek, bacon, mushrooms and garlic for around 5 minutes or until onion has softened..
- Return the beef to pan with flour. Cook for 1 minute and add potatoes, thyme and bay leaves..
- Stir in beer and stock, pour into a large casserole dish- cover and bake for 2 hours..
- Remove thyme and bay leaves, serve with crusty bread..
